Cars in Need for Speed: Most Wanted are unlocked as players progress through the Career and Challenge Series.
Multiple cars are unlocked upon the player defeating certain Blacklist racers.

- Several game files indicate that some playable vehicles were associated, pitched or at one point licenced for use in the final game:
- The car body mesh of the BMW M3 (E46) can be found in the game files. A folder for the Nissan 350Z can also be found in the same location, but only contains associated vinyls.[1]
- References for the BMW M3 CSL (E46) can be found in the language files.[2]
- Logo UI textures can be found in the game files of the PlayStation 2 demo for the Acura NSX, BMW M5, Infiniti G35, Honda S2000, Hyundai Tiburon GT, Mazda MX-5 Miata, Mitsubishi Lancer ES, Nissan Skyline GT-R, Peugeot 206, Toyota Corolla GT-S, as well a single logo for the Lincoln car brand; although some of them may be leftover content from the overlapping development of Need for Speed: Underground 2.[3]
- Alongside the manufacturer logos present in the retail game, additional logo UI textures for the then in development Chevrolet Corvette C6 Competition and Porsche 911 Carrera GT as well as the Porsche 996 Turbo S.
